Turkey Soup

Put the cut up turkey carcass (keeping any stuffing that was stuck in the cavity or bits that remained) in a stock pot, cover with cold water. Cut in half one carrot one celery stalk one medium onion. Add two- three bay leaves, herbs (sage, parsley, tyme) preferably fresh and two tablespoons of powdered chicken soup base or to taste depending on preferred flavour of the stock. Bring to a boil then simmer until the meat has separated from the bones .......
Pour into a strainer. Take out the best pieces of meat and discard the rest or feed it to the coyotes ......(they'll leave the chickens alone for a while)
At this point you can divide the stock. Pour some into sterilized jars and seal, or freeze in icecube trays. Save some to make soup......
Add your vegetables(carrots, onions, celery, potato, squash, turnip, parsnips) to the broth (whatever you prefer) if you like peas add them later. Bring to a boil, turn down the heat and simmer until vegetables are soft. Add cut up turkey meat leftovers, turn up the heat, bring back to a boil. Add peas now. Turn down the heat and simmer for 10 - 15 min.....
