04.15.10 -W&W Jamaican Black Bean Pot
W&W this evening featured this Jamaican Black Bean Pot from my Vegetarian cookbook.
Sauteed onions and garlic, mixed with black beans, brown sugar, thyme, mustard powder, and chili powder cooked in a vegetable broth at 350 degrees for about 25 minutes. Then I added chopped butternut squash and a red and yellow bell pepper and baked for another 45 minutes. Serve over rice and admire the deliciousness. Seriously tasty, and certainly something different, and totally satisfying.
