this. Ashley forwarded me this amazing find from Runnersworld.com. It is supercalifragilisticexpiali-delicious. Cauliflower substitutes for heavy amounts of cheese so now even runners can enjoy southern comfort food. I dropped the broth amount down to 2 cups and added about a half a cup of tofu for creaminess, substituted a tsp of mustard powder for mustard (because I just didn't have mustard), and might have stepped up the cheese amount a tad (used gruyere) and added some broccoli into the bake. Be a bit liberal with the salt too. I used a mix of spatzel and rotinis for the pasta because thats also just what I had. I made this for the girls for Harry Potter night (post on the way) and it went over so well, Katie said she would make it every day and never get tired of it. TRY IT!
