Mmm, Cookies!

For the filling: 1 cup of chopped dates.

1 cup of finely chopped apple (about one apple). Peeling the apple is a good idea, but I don't like to for two reasons: 1) all the nutrients are in the peel and 2) I'm lazy.

Zest and juice of one orange (about 1/4 cup of juice, I didn't have enough, so I used some apple juice too). What else would you do with a naked orange?

1/4 cup of sugar (I used about 1/8 cup since some of the dates I used already had sugar on them).

All of the above in the pan!

Cook on medium heat for about 5 minutes.

Cool! I didn't wanna wait too long, so I put it in the freezer. It is important to cool it though, I tried to hurry through the recipe last week and the cookies were all mushy--still delicious though!

For the cookies: 1/2 sugar, 1/2 brown sugar.

1 egg and 1/2 teaspoon of vanilla.

1/2 cup of butter (or some substitute).

Wooo! Mixing. This is the tastiest bit.

1 and 2/3 cup flour, 1/2 teaspoon cinnamon, 1/2 teaspoon baking soda, and a pinch of salt.

Put dough between two sheets of wax paper of plastic wrap (colored optional). Roll out to about 16in by 8in.

Spread on the filling!

Roll it up.

Wrap it up.

Put it in the fridge for 2-3 hours. I didn't think my dough had enough moisture, so I added some water. Then it was real sticky, so I put in the freezer for about two hours first, then moved it to the fridge.

Wash dishes while you wait. I also did the laundry, did some planting, some packing, some chatting, and a lot of browsing on photoblog.

Cut into 1/4 slices. I keep the plastic wrap on so I don't get all sticky while I cut--I remove it when I put it on the baking sheet.

Put on ungreased baking sheet, about an inch apart. Bake at 375F for about 11 minutes, or light golden around the edges.

Let them sit on baking dish a minute or two, then transfer to a cooling rack. Yummy! :-)

I decided to give cooking photography a try. I've found that recipes aren't really rules, they're more like...guidelines. :-)
