Banana bread folks, warm from the oven at posting :)
It won't last long though, so you'd better act fast.

Makes 1 loaf (I doubled it for this, and made 2)
Preheat oven to 350F.
1 1/2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1/4 cup shortening (I used margarine today)
3/4 cup brown sugar
3 large overripe bananas, mashed
1 large egg
In a bowl, cream shortening with brown sugar. Add egg and combine, then add bananas.
To this add dry ingredients. Combine until moistened. Pour into greased loaf pan. Bake for 50-60 minutes until tester removes mostly clean.
Enjoy warm with butter!
