ginger shortbread

Ginger Shortbread
1 cup flour +
1/3 cup sugar
2 tsp ground ginger
1/2 cup butter
1 Terry's Chocolate Orange Snowball, (less a piece or three for nibbling)
Preheat oven to 325F. Combine all ingredients except the chocolate in a large bowl and combine with your hands until well mixed (add more flour if necessary to make a dry dough). Press firmly into a 8" round cake pan. Use a fork to prick score lines to make 8 wedges. Bake for 25 minutes or until edges are lightly browned. Remove and cut along score lines immediately. Cool completely in pan.
Remove from pan and place on a plate (or like me, flip the pan over and use the bottom). Melt the chocolate in a glass bowl in the microwave, stirring every 30 seconds, until melted and smooth. Use a spoon to drizzle over the shortbread. Refrigerate until chocolate is firm.
It's not exactly the same as Felecia's favourite, but it's pretty darned good! (as proven by the empty plate)

Never tried shortbread with ginger, but it sure does sound delicious. The chocolate drizzle adds a touch of sophistication to the presentation.Your food photos are fantastic! Christmas baking season is here.....woooohooo
