Chocolate Cream Cheese Flan

Everything you need to make flan (pictured above is a double recipe) - sweetened condensed milk, evaporated milk, cream cheese, butter, chocolate, and vanilla.

Here's the simple syrup being boiled in it's pot.

You have a couple of seconds before the caramelized sugar hardens in your ramekins. You should try and swirl the sugar up the sides of the ramekin during this time.

Once your evaporated milk is bubbling (don't boil it), take it off the heat and add your chocolate. It should melt pretty quickly.

I was searching for a flan recipe a couple of years ago, when I stumbled upon this one. The cream cheese makes it a bit thicker then normal flan, but it's still really good. Here's the full recipe:

1 cup sugar
1/2 cu pwater
1 (12oz) can evaporated milk
1 (14oz) can sweetened condensed milk
1 (8oz) package cream cheese
1/2 cup butter
5 large eggs
1 teaspoon vanilla extract

Preheat your oven to 350F
In a saucepan, combine the sugar and water. Cook over low heat, stirring constantly until the sugar is dissolved. Increase the heat to full and let the mixture boil until it starts to turn caramel color(about 15 minutes). Pour the caramelized sugar into 6 ramekins. If it starts to harden before you're done simply reheat it.
In a seperate pan heat the evaporated milk until it begins to bubble. Remove from heat and add chopped chocolate. Stir until the chocolate melts.
In a blender combine the chocolate mixture, cream cheese, butter, eggs, vanilla extract, and the sweetened condensed milk. Blend until everything is incorporated.
Pour your mixture into the sugared ramekins. Put the ramekins in a deep baking dish and add water to the dish (about 1 inch deep). Place these in the oven and bake for about 35 - 40 minutes. The flan are done when a knife inserted in the middle comes out clean.
To serve these, invert them onto a serving dish - the sugar will leak flow everywhere.

lukesmom This looks good, although I am not a custard fan. I've never seen chocolate flan before. Nice post!
