You can use any acidic fruit to make this sauce. I like pineapple because it's not too sweet.

Be careful when adding your chipoltes. I've found that some of them are significantly spicier then others.

I got the base for this recipe from my younger brother. The sauce has a nice smoky flavor and just the right amount of heat to it.
Ingredients:
1/4 cup butter
2 yellow onions
9 cloves of garlic
1/2 pineapple
3 chipotle peppers in oil
2 cups brown sugar
1 1/2 cup molasses
5 cups ketchup
1/2 cup apple cider vinegar
2 tablespoons garlic powder
2 tablespoons paprika
2 tablespoons colemans mustard
1/4 cup chili powder
2 sticks of cinnamon
Directions:Saute the onions and garlic in butter until the onions start to brown. Add the peeled and diced pineapple. Cook until the pineapple starts sweating. Add the diced chipolte peppers and cook for five minutes.
Add the rest of your ingredients and bring to a boil. Simmer on low heat for about 20 - 25 minutes. Allow to cool for 10 minutes and then blend until smooth.
