These are cookies and candy I made for Christmas.

Snickers Cookies

1 cup butter
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
60 miniature (bite-size) Snickers candy bars

chocolate glaze (recipe below)

Preheat oven to 350 F. Cream butter, peanut butter, sugar and brown sugar. Add eggs and vanilla. Combine dry ingredients and add to peanut butter mixture. Take 1 tablespoon of dough and flatten into round shape in palm of your hand. Place Snickers bar in center and fold dough around it. Pat in palms of your hand to form a smooth ball with the Snickers bar totally covered with the dough. Place on an ungreased cookie sheet. Bake for 10-12 minutes (I bake for 8 min with convection). Remove from cookie sheet and place on a wire rack to cool. Drizzle top of cookies with chocolate glaze.

Chocolate Glaze

1 cup powdered sugar
2 tablespoons unsweetened cocoa
1-2 tablespoons milk

Mix powdered sugar, unsweetened cocoa and milk. Add additional as needed to thin mixture enough to drizzle from a spoon.

White Chocolate Raspberry Thumbprint Cookies
(I double this for the holidays)

1/2 cup butter, softened
1/2 cup sour cream
1 cup white sugar
2 tablespoons milk
2 eggs
2 2/3 cups all-purpose flour
2 cups rolled oats
1 teaspoon baking soda
5 ounces white chocolate, chopped
2/3 cup raspberry preserves

1 tablespoon butter
1/2 (1 ounce) square white chocolate
1 cup confectioners' sugar
2 tablespoons milk


Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the 1/2 cup butter and sugar until smooth. Blend in the sour cream, 2 tablespoons of milk and eggs. Combine the flour, oats and baking soda, gradually stir into the creamed mixture. Finally, stir in the chopped white chocolate. Drop by rounded spoonfuls onto the prepared cookie sheet. Using a finger or your thumb, press a dent into the center of each cookie. Fill the dent with a 1/2 teaspoon of raspberry preserves.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
To make the glaze: Combine 1 tablespoon butter and 1/2 ounce white chocolate in a microwave safe bowl. cook on high, stirring every 15 seconds until smooth. Gradually beat in the confectioners' sugar and milk until icing is of a drizzling consistency. Drizzle over cooled cookies.

Nut Goody Bars or Marshmallow Mess

4 cups semisweet choc chips
2 cups butterscotch chips
2 cups crunchy peanut butter
1 cup peanuts (or nut of choice. I like dry roasted peanuts)
6 cups mini marshmallows

Melt chips on low heat. Stir in peanut butter and nuts. Take pan off heat and quickly add marshmallows. Stir until marshmallows are completely covered. Pour into a 9x13 greased pan. Refridgerate.

Hello Dolly Cookies

1/2 C butter ~ melted
2 C. graham cracker crumbs
2 c. coconut
2 c. chocolate chips
2 c. walnuts chopped
2 cans eagle brand milk

In a 13x9 pan, spread melted butter along bottom and sides. Then, spread a layer of each as listed above, graham cracker crumbes, coconut, chocolate chips, cipped nutes, and the eagle brand on top. Bake for 30 minutes at 350 degrees. Cut in squares when cool.

Half recipe and make in 9x9.

Payday Bars

1 (18.25 ounce) package yellow cake mix
1/3 cup butter
3 cups miniature marshmallows
2/3 cup light corn syrup
1 egg
2 teaspoons vanilla extract
2 cups peanut butter chips
2 cups salted peanuts
1 1/2 cups crisp rice cereal
1/4 cup butter

Preheat oven to 350 degrees F (175 degrees C).
Mix together the cake mix, 1/3 cup butter or margarine and, the egg. Press into the bottom of one 9x13 inch pan and bake at 350 degrees F (175 degrees C) for 12 to 18 minutes. Remove from oven and sprinkle with miniature marshmallows. Return to oven for 1 to 2 minutes or until the marshmallows begin to puff.
In a saucepan over medium heat cook corn syrup, 1/4 cup butter of margarine, vanilla, and peanut butter chips until melted. Remove from heat and stir in the puffed rice cereal and salted peanuts. Spoon mixture over top of marshmallow topped cake and spread to cover. Allow to cool before serving.

Creamy Chocolate Fudge

1 (7 ounce) jar marshmallow creme
1 1/2 cups white sugar
2/3 cup evaporated milk
1/4 cup butter
1/4 teaspoon salt

2 cups milk chocolate chips
1 cup semisweet chocolate chips
1/2 cup chopped nuts
1 teaspoon vanilla extract
1. Line an 8x8 inch pan with aluminum foil. Set aside.
2. In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter
and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
3. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.

Gumdrop Fudge

1 1/2 pounds white candy coating
1 (14 ounce) can sweetened condensed milk
1/8 teaspoon salt
1 1/2 teaspoons vanilla extract
1 1/2 cups chopped gumdrops

Line a 9-inch square pan with aluminum foil; set aside.

In a saucepan, heat the candy coating, sweetened condensed milk milk and salt over low heat until melted. Remove from the heat; stir in vanilla extract and gumdrops. Spread into prepared pan. Cover and refrigerate until firm.

Using foil, remove fudge from the pan; cut into 1-inch squares. Store at room temperature.

I used to be a baker at a university and let me tell you, making cookies is not so fun when you scopp 25 dozen of them a day! Although you can't beat those industrial mixers!
