Those bowls are glazed with an underglaze. That's why they don't have a shiny finish. If the glaze isn't coming off on your hand then they're fine.

The sure sign that something hasn't been fired after being glazed is that the glaze comes off in your hand. Also, prior to firing, most glaze doesn't look like the color it's going to be. I'll glaze some stuff over the weekend and after it's fired I'll do before and after shots.
