This is called sword sailing (with laser pico boats). It's a very effective way to learn how to sail. Every good decision is rewarded immediately (by gaining speed and a rush of adrenaline). While every 'bad' decision is punished directly (by falling into the water or capsizing). In some way it's like bouldering; the technique needs to be performed perfectly if you want to move forward.
Once you fall into the water it cost a lot of energy to climb (boulder) back into the boat... And (this goes just for me); once I get totally soaked, it cost me a lot of energy not to get hypothermia. The wind is my best friend. But it's my biggest enemy as well.
