Trattalliu - The recipe
Take all the interiors from the lamb (mainly liver, lungs, kidneys, heart, diaphragm), wash them very well, chop them in pieces and put garlic and parsley in pieces. Insert all the pieces in a spit. Wash very well the intestines. Roll all the meat in the spit with the membrane of the lamb abdomen, and finally tigh it with the intestines. You will obtain as a final result the salame shown in the picture.
