Vicki's Banana Bread Recipe 39 Years Later

Remember Rorschach? For those of you that stayed within the lines and thought "bananas", which I know was not an easy thing to do, get a piece of this bread. Vicki's banana bread was the yummiest thing ever in 1972, and I just had to get the recipe. I was saving those "bananas" for something like this, and I finally had time to dig out Vicki's recipe from those college days. I know, I know -- those bananas look like they were from 1972!!
I noticed I had recently researched all the corrections to adapt this for HIGH ALTITUDE BAKING, but don't remember ever putting it to the test. Opening up those Rorschach bananas was quite a visual feat, but the proof was in the bread, as they say. The kitchen aroma was incredible as it baked, and man, is that wonderful banana bread!
Vicki, tasting this banana bread reminds me of all those fun times we had, what still seems like yesterday. Ok, maybe the day before, LOL........

Great shot, great looking bread, great words and memories. We all have our own "banana bread" recipie that we have tucked away from the 70's!
