They serve duck the whole day from morning till evening hence the ducks displayed at the back kitchen (spotted this with my telephoto lens as I found the restaurant from the back door)

upon taking the order for a duck, they will dunk the roast duck into hot oil (hidden from view) for an extra minute or so - the left duck just out from the hot oil!
