On those headlight shots where you want to capture movement it's ok to turn down the camera's ISO to 200 or 400 since your exposure is going to be longer and the lights can be so bright. Then you will get less grain and good intensity. Also a tripod, as arzenteart suggested, will give you well focused long exposures for landscapes, again allowing you to turn down the ISO for shots with less grain. That one with the sheep in the foreground would be great with a tripod to keep it steady!
