Day 185 of 365 - Perfect Chicken

One of the neat things about being married to a foodie and having a son who is an aspiring Chef, you get to try new things. For those that know me, I’m not big on new things when it comes to food. I find something I like and I stick with it. Anyone who knows me well knows that I am probably the single most boring person when it comes to food on the planet. Don’t get me wrong, I love good food, but I hate trying something new and then being disappointed in it and not liking it as well as one of my tried-and-true favorites. Both my wife and my oldest son are the complete opposite. They are constantly in search of something new, elusive, the ultimate of something.
Today, my son presents me with his take on Fried Chicken. I love Fried Chicken and for those of you from Southern California, you know that nothing is better than Mrs. Knott’s Fried Chicken from Knott’s Berry Farm. I have had lots of chicken in my day, but Cordelia Knott knew what she was doing. So it was with quite a bit of trepidation that my son sits this plump and juicy drumstick down in front of me with a fork and a knife and asks me what I think. He is excited, he is pretty sure he’s got it and I am dreading it. What happens if I don’t like it? How do I tell him? It can’t be as good as Mrs. Knott’s Chicken. But, I smile and look at him and say, “Ok, let’s do this.”
Oh....my! It was AWESOME! Light, crisp, moist, full of light flavor with no greasy taste or texture. It was heavenly, very different than Mrs. Knott’s, but no less delicious. And then he adds this incredible Chipotle Mayonnaise to use as a dip and that takes to a completely different level than any chicken I have ever had. It was HEAVEN! I’m dying for more! We had it with today’s 4th of July dinner with our friends and everyone just voraciously wolfed down every piece. So, I now have a new favorite chicken, and I am so happy to report that the “inventor” of this chicken lives under my own roof. Lucky Me!!
