Here's an idea... open your image. Duplicate it into 2 images. Convert one to black and white. Put both together as layers, Black and White layer on the top. Add a white layer mask, use a black brush, and paint where you want color. It works!

hi, im new here but i know what you want to do and there is an easier method than stated above.
follow the first few steps by creating two layers that are of the same photos and convert the top one to black and white. Then just make sure you are selected on the top layer and erase where you want there to be colour!
SIMPLE!!
hope this helps you. see my website for some examples in the beach section of my gallery!

If you are looking to remove particular colors, you can also use the Image > Adjustment > Replace Colors tool.
Use the dropper to select the color you'd like to remove and then use the Saturation slider to desaturate that color.

there is another way it can be done as well.. selective colour desaturation or something like that.. i have done it with a few of my photo's posted in my blog.. its quite simple but can be time consuming depending on the result you are looking for.

Wait, I said it for the GIMP, not photoshop. I don't have a clue, then!
