I like marinated mushroom salad.
Here is my easy version…..
Regular white mushrooms
Marinated red peppers
Italian salad dressing
Proportions or how much of what - not important!
Clean and cut mushrooms in quarters
Boil mushrooms for 10 min in slightly salty water. (They will shrink a lot!)
Cut all the other ingredients in small pieces
Mix the salad dressing with some artichoke and the red pepper marinade
When mushrooms are ready strain the water and still hot mix all ingredients (not the marinade)
Fill up jars loosely. Don’t compact.
Pour the marinade to the top.
Leave open for 10 min to let the liquid to set.
Close the lid and keep in the refrigerator for 2-3 weeks before opening.
The taste is just great.
It could be used as a little side salad by it self or you can mix it in a green salad that you making as a little extra on the top (that’s what my girlfriend is doing).
