Eggplant, Sausage and Ziti Casserole (by Emeril Lagasse) recipe found on foodtv.com. Not exactly healthy but really good.

Almond Macaroons. I love the chewy consistency, although it makes my jaw hurt a little (I get TMJ pain often).

Since my parents purchased a small business we hardly ever have time to eat at home. We pack lunch and dinner and eat both at work, which gets to be a bit tiresome. So today I decided to make dinner so that my parents and I could have a hot meal at home for once. I found a casserole recipe on foodtv.com that sounded really good so I gave it a try. We all liked it a lot so it will definitely be a recipe to keep.

I also made some almond macaroons today. When I was going to college in Pittsburgh I was working part-time in an office on campus. One day, one of the professors brought back some almond macaroons from the Duquesne Club. I loved the cookies and wanted to find a recipe for them. Then, at a party, someone had brought homemade almond macaroons that were almost as good as the Duquesne Club cookies. I asked her where she got the recipe and she replied “on the back of the can of almond paste.” I searched high and low for canned almond paste and couldn’t find it anywhere. Sadly, I gave up my search and forgot all about trying to make the cookies. Then a few months ago I went to Cost Plus and found canned almond paste! I’ve had this can of almost paste since June and I finally got around to baking the cookies. It’s been so long since I had the Duquesne Club macaroons I can’t tell you if mine were as good but I think they came out ok.
