I came across this blog that claims to have a recipe that creates frozen yogurt that is better than Pinkberry. I figured I needed to give this recipe a try, especially if it gives me a cheaper version of what I like so much! It would also be great to make my own flavors too.
Now, I am a huge fan of Pinkberry but I think not for the same reason as everyone else is. True, the tangy flavor is much better than the cloyingly sweet stuff you find out there (apparently not for some people, though). For me, the true wonderfulness of Pinkberry is the slightly icy consistency. It’s not completely smooth and creamy, which, to me, is perfect. Actually, it doesn’t have to be Pinkberry yogurt. I discovered that Yogurt Land froyo also has a good icy consistency that I like.
I have to freeze my ice cream maker bowl first so I can’t make this until tomorrow night, so we will see. If it comes out too creamy I’m going to experiment with maybe a lower-fat yogurt or adding a little bit of milk.
I also have to add that I love Trader Joe's. I used to eat a ton of this tamarind candy stuff when I was in Jr. High/HS. A few years ago they pulled it off the shelves because it had high levels of lead (great to know I've been poisoning myself all these years). Enter Trader Joe's with their dried tamarind with brown sugar and chile. Not quite as good as the candy but a decent substitute!
