In this case I prefer #3 because the color is the most of what this shot has going on and this variation plays that us well. For me the shapes get lost in b/w and the color doesn't pop enough in the first.

I like #2 because its shape isn't distracted by the colors. But it's more or less a tie with #3.

Karman, these are great exercises in editing. Although I prefer the first one, I do like the enhanced color and "shine" in the last one.
