no ordinary pastry.....egg yolks, icing sugar, lemon zest, flour, vanilla

now chill for 1 hour, roll out between baking parchment then freeze for 30 mins
|
bake blind for 20 mins
|
nine eggs and one yolk
|
zest and juice 6 lemons
|
cream, sugar and lemon zest
|
stir constantly untill mix reaches 62 degrees
|
pour into warmed pastry case and cook untill mixture reaches 70 degrees
|
allow to cool then dredge with icing sugar
|
remove from ring
|
the texture is amazing it almost melts as you bite into it....

oh my word what a fabulous set. since I love to cook the time would be totally worth it. the 5th shot really gets my attention (because I love lemon??) and the last shot is perfect and looks tasty!!! to my favs :)

What a fantastic set of photos! You have done an amazing job with this recipe Steve! Looks like quite an ambitious dish to make, but oh so wonderful to eat!...... BTW....Your shot of the pie wedge is much better than the book!
