poor Lili can't find the 'right' kind of cuts, like she is used to in China. This looked close to what she wanted...if it was unrolled. She agreed when she saw it. Chinese meat seems to always be the worst, and boniest or fat filled cuts. I don't know what they do with the 'good' cuts that we like. Also, lots of fat is necessary.

am I crazy? this is what I would prefer. this is a fabulous REAL butcher! no plastic wraps, everything wrapped in oiled brown paper.

Take Lili to Fairway Market when you can use your wheels again. They have all the 'right' kind of cuts including pig uterus and ears!
