Vegan Lemon-Poppyseed Muffins

Vegan lemon-poppyseed muffins were delicious with a glass of orange juice for breakfast. I made Dustin a 4-egg steak-and-bacon omelette with cheese... a non-vegan breakfast if ever there was one...
Anyway, for the muffins I used a Krusteaz baking mix and substituted some oil and baking powder for the egg. And in the first picture, that's Earth Balance 100% Vegan Buttery Sticks... Dustin and I got separate omni and vegan butter dishes :) It's adorable.
