			<title>Vegan Lemon-Poppyseed Muffins</title>

I made Dustin a 4-egg steak-and-bacon omelette with cheese... a non-vegan breakfast if ever there was one...

Anyway, for the muffins I used a Krusteaz baking mix and substituted some oil and baking powder for the egg.  And in the first picture, that's Earth Balance 100% Vegan Buttery Sticks... We followed a recipe (Lasagna with Herbed Tofu) from the Student's Go Vegan Cookbook, but we halved it and used elbow macaroni instead of actual lasagna noodles.  I think this dish owed a lot of its deliciousness to the sauce we used, Bertolli Mushroom and Roasted Garlic.  Whoever veganized lasagna was a freakin genius. 			<title>Vegan Potato-Carrot-Spinach-Celery-Onion-Garlic Deliciousness</title>

We basically just threw all the vegetables we had into a skillet, seasoned it, and called it dinner.  Although we still have no name for it, it ended up being quite delicious, and tonight we actually went shopping and cooked it on purpose.
