A mix of Idaho and red skin potatoes, roasted, with turkey bacon and rosemary. It's totally not the season for using the oven, and yet I find myself craving all these mild, roasted comfort foods. Even though I have no A/C, it's 85 and humid.

Yes, this looks exactly the same as above, but this is potato salad. I had extra potatoes to cook, so I cooked them and some turkey bacon (throwing in some diced Vidalia onions after, to cook in the turkey "grease") and let them both cool. Then I crumbled the bacon, threw in some frozen peas and made a dressing--The dressing was olive oil, rice wine vinegar, lemon juice, thyme, s/p, and basil. Toss with the dressing and...voila! Potato salad! So good.
