It looks like you are working out the basics in your mind very well. High aperture = Infinite focus for depth of field and sparkly light at night. Low aperture = shallow depth of field and fuzzy backgrounds. Sometimes with a DSLR its fun just to go out and work with Manual only. Turn off all automatic options.
