Black Bean and Corn Salad

Well you know me.....if there's an avocado laying around, it's in my dish!!! The recipe doesn't call for it, but it tastes great in there!!

I LOVE the taste of cilantro, lime and cumin together. It reminds me of a southwestern dish.

This is a delicious salad. It makes a great dish to take to a potluck, or a picnic. It's light, yet full of different flavors.
1 can black beans, rinsed, drained
1 can corn, drained
1/4 small red onion, minced
2-3 green onions, minced
1/8 cup chopped fresh cilantro
1 large tomato (without the seeds and juice)
1/3 cup olive oil
1/3 cup lime juice (or juice of 1 lime)
1 1/2 tsp cumin
1/4 tsp salt & pepper
In large bowl, combine all ingredients, refrigerate at least 1 hours before serving.

i have made a similar recipe with black-eyed peas instead. try it. it is a great dish to serve on new year's day!
