ok, ok, I know this looks gross, but trust me, it's SO good. lol
We're onto another recipe....this is not cookie dough. It is a mushroom veggie bean burger.

So today I spent all afternoon cooking for the upcoming week. I made a batch of seitan, vegan cookies, black bean and mushroom patties and vegan alfredo. I didn't take a picture of the seitan because I plan on battering it in corn flakes and frying it up tomorrow for dinner, so it's not 'complete' yet. I boiled it in the 'chicken' flavoring. (vegetable brother, tamari, garlic, poultry seasoning)

The cookies were a pretty simple recipe. It seems to have everything my old 'omni' recipe had (only halved) without the egg. Instead of egg, it called for a 1/4 silken tofu blended with the vanilla. They turned out amazingly good. I undercooked the first round in the oven because I was scared of them getting too hard, but the second round browned up nicely and weren't at all hard. I even added vegan chips. :) Delish. My husband liked them, so that's a good sign!

The black bean and mushroom burgers look so good I can't wait to get into them! I even ate the mixture when it was cold and it was good. lol It's sauteed chopped mushrooms, minced garlic, and onions seasoned with cumin. Add that to a can of drained, mashed black beans and add either bread or crushed crackers to absorb some of the liquid and help it stick together. Form into patties and either bake them or fry them in a little bit of oil. SO good!!

And then the alfredo sauce over pasta. I was out of fetuccini so I used just some other noodles. I started with sauteeing the mushrooms and frozen artichoke hearts in some margarine. Then when those were almost done, I threw in some fresh zucchini. Add equal amounts of flour to the butter you used to sautee and cook for a minute so the flour doesn't taste raw. Then add 1 1/2 cups of soy milk *unsweetened!!*, 1/4 cup of nutritional yeast flakes, salt and pepper to taste, and parsley. Toss with cooked pasta. I served this with soy parm cheese and a crusty piece of bread. YUMMY!!
