Vegan Fudge

This fudge is super easy, has no dairy or marshmallows, and tastes just as good as the other stuff. It is really soft, and you have to let it set up in the fridge until it's totally cold. I, personally think this would be great, piping hot, over vanilla soy or rice ice cream. Nothing beats hot fudge. Who says vegans can't enjoy a delicious hot fudge sundae?

Lightly grease a 5x9 inch loaf pan using a little of the margarine.

6 TBSP margarine
3 1/2 cups powdered sugar
1/2 cup cocoa powder
1 tsp vanilla
1/4 cup soy milk
1 cup chopped nuts, optional

Place the remaining margarine, sugar, cocoa, vanilla and soy milk in a heatproof mixing bowl or the upper part of a double broiler.

Place the bowl or broiler over simmering water and stir until smooth. Add the nuts if desired.
Pour the mixture quickly into the prepared pan. Chill thoroughly and cut into squares.
