Variation on the Muffin

This is that no fat banana muffin I made the other day, but since I was home on a "snow day" today (check out the pics on my other blog: photoblog.com/tamaraharden) I decided to make these yummy muffins again, with some slight variations. I had some strawberry applesauce, which wasn't unsweetened, so I only added half the sugar, and I added some grated apple in place of some of the applesauce. YUM!! The batter had a slight pink tint to it, and it was so moist. You could see the pieces of apple and banana. You could try carrots, zucchini, berries, use your imagination. Let me know what you come up with.
