I love chicken pot pie, only I make mine without the chicken, of course. I just use a basic pie crust, and for the filling, I use a basic white sauce recipe, only using vegetable bouillon (or broth) instead of the milk (margarine, flour, broth). I also microwave the potatoes, and steam the veggies first, and you can use any vegetables your heart desires. Put the veggies in the uncooked pie crust, pour the sauce over, top it off with the top crust, and bake @ 425 for around 40-45 minutes, or until crust is nice and golden brown. This is SO good!!

mmmmmmmmmmmmmmm.............. I cant be b othered cooking lately..but I do love a good chicken pie..or chickenless pie.....hehe..this might be enough of a temptation to get me back in the kitchen!
