Shredded Carrot Salad

With one biteful, you can taste the sweet, the tart, and the salty. Quite an array.

It's better if you let it sit a little before serving. It becomes much more flavorful. The flavors have a chance to fuse together.

2 TBSP lime juice
1 1/2 tsp honey
1/2 tsp salt
1/4 cup extra-virgin olive oil
3/4 lb carrots, peeled, trimmed & shredded (about 3 large)
2 TBSP chopped fresh cilantro
1/2 tart green apple, cored, and cut into 1/4 inch dice

* For dressing, in a medium bowl, whisk together juice, honey and salt. Drizzle in oil, whisking constantly, until combined, well; set aside.

* In a medium bowl, combine carrot, apple and cilantro. Toss with dressing and serve. (Can be made ahead. Cover and refrigerate up to 12 hours).
