Comfort Food~~~Meatball Casserole

Get yourself out some ground beef (1lb to 11/2 lb.) and toss it in a bowl..add 1 egg some ketchup, mustard and 1 cup of dried bread crumbs, 2 tbsp. of dry onion soup mix and a dash of pepper. Now mix it all up add a little milk or more ketchup if it's too dry…..
Now scoop out the mixture by tbsps. full and roll it up into balls and drop them in a dish of flour and give them a shake to coat them.
Heat two tbsp. of oil in a dutch oven or pot and brown the meatballs….remove them and drain off the fat ….

Slice up a couple of big carrots (about 11/2 cups) some celery (about 1 cup) I used a crinkle cutter in case you're wondering and quarter two medium onions….You'll probably want to have the vege's prepared ahead of time…

Now back to the meatballs….. After you have removed them from the pot ….Throw in a can of whole tomatoes into the pot and add 1/4 cup of water, 1 tbsp.of dry beef gravy mix or soup base (boullion) 2 tblsp. of flour and stir into the tomatoes….Cook until mixture thickens and bubbles…

Add the meatballs, carrots, onions and celery. Cover and simmer for 15 minutes. Pour into a 2 quart casserole dish…(If you have a dutch oven you can just put it straight into the oven) I like that! …. Bake at 350 degrees F for 1 hour or until the vegetables are tender….

Serve with some nice crusty rolls….Soooo good on a cold snowy day…Ahhh comfort food….

Mmm.. meatballs, you just cant beat them for comfort food.. unless of course you are serving soup, which is the ultimate comfort food..

Sounds and looks delicious! It's like our stew too..Can make it the same way with lean, cut up stew meat..seasoned and add veggies (I like your crinkle cut) and can be served over rice..
