Potato, Leek and Bacon Soup

I think it's about time for a food entry into the "motleycruedelight" [photoblog.com]
Yes… it has been awhile and Soup is a Delight indeed!

Note: The amount of ingredients varies according to how big of a pot of soup you want to make. I like to make a big pot and jar it ….

The start of Potato, Leek and Bacon Soup….
Peel and dice the Potatoes
Clean the leeks thoroughly as they tend to have bits of dirt, cut the green and the ends off…slice into small pieces….

Cut up some bacon into very small pieces ( I use scissors for this) and start it simmering in the pot. You might like to add a little butter to the pot. Then add the leeks and potatoes. Put a lid on the pot and let simmer for about 5 min. until the vegetables are glistening….

Add some boiling water and chicken broth….

Bring to a boil, then turn down the heat and let the soup simmer for a while, until the potatoes are soft and the broth is well blended….
Then give it a good whiz with the hand blender or what ever blender you use..
The soup will be thick and creamy, if you like it thinner add a bit more water or chicken broth….
I like mine chunky so I add some sliced up potatoes….
Cut them in half, then in half again, slice across…
Add spices at this point, such as a little sage, parsley, mixed spices, nutmeg, pepper, what ever you like the taste of…
Bring the soup to a boil again, then turn it down to a simmer until the added potatoes are cooked through…

Serve yourself up a bowl with some nice crusty bread or biscuits….
Season your soup with salt and pepper to your taste preference. Add a salad on the side and you have yourself a nice hearty meal….
