This is by far my most favorite recipe when it comes to flank steak. As most of you know flank steak is not a very tender cut of beef but with some pounding and a good marinade, it becomes a delicious piece of meat. I can't recall where I got this recipe from but I know it's been around in our household for quite a while.
It is a very simple recipe which consists of taking a flank steak and tenderizing with a mallet. Once you have tenderized it, roll it into jelly roll fashion and cut into 1 inch thick rounds. I use toothpicks to secure the rolls.
Mix 1/4 cup sherry with 1/4 soy sauce, a couple of tablespoons tomato paste, some crushed garlic and salt/pepper (these are all rough measurements based on the amount of meat). Depending on the type of soy sauce used, you really don't need any salt.
Place the rolled meat in a deep container and pour the marinade. Make sure all pieces of meat are submerged in the liquid. Let rest in the refrigerator for 24 hours.
Fire up the grill and place the rolled meat on the grill for approximately 5 minutes to a side for medium rare ( if you like yours medium or well done then obviously you grill them longer).
Et Voila! Serve them with any side you like. I serve them with Basmati rice and some Tahdig (crunchy rice). 🥩🥗🥣
