Bread Pudding @ Curragh's

Bread pudding is one of my favorite desserts. But because it is not my husband's favorite desert, I don't make it at home, at least, not often. Alternately, whenever we are out for dinner and if I find it on the menu, I make sure to leave enough room to order.

While this is not my recipe it is one I have made in the past. Enjoy.

Bread pudding with hot butter rum sauce

  • 7–8 cups torn or cubed French bread
  • 3/4 cup dark brown sugar
  • 3 cups milk
  • 4 tablespoons butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2/3 cup raisins
  • 1/4 cup rum, divided
  • 4 beaten eggs

for the sauce

  • 1/3 cup heavy cream
  • 1 cup white sugar
  • 1/2 cup butter
  • 1 1/2 tablespoons rum

INSTRUCTIONS

  1. For the bread pudding, cut or tear bread into pieces and place in a large bowl. In a medium saucepan over low heat, melt brown sugar, milk, butter, cinnamon, vanilla, raisins, and 2 1/2 tablespoons rum. Stir constantly until sugar is dissolved. Pour over bread and allow to soak for 30 minutes.
  2. Preheat oven to 350 degrees. Add 4 beaten eggs to the soaked bread mixture and stir gently. The bread should be completely saturated with the egg and milk mixture. Pour into a buttered 9-inch square baking dish and bake for 40-50 minutes until the top is browned and the middle is set. Do not overbake or the bread pudding will become dry.
  3. For the sauce, melt the heavy cream, white sugar, and butter in a medium saucepan over low heat. Do not boil or the mixture will start to crystallize. When sugar has dissolved, add 1 1/2 tablespoons rum. Pour the warm sauce over each slice of bread pudding before serving.

I loooooove bread pudding. It is not something that I make often because my wife does not like it and my daughter well it depends on her mood if she wants any and there is no way I need to eat a whole dish of it so I can relate. We had a Chain Shoneys that had some of the best restaurant bread pudding that I have had. I miss it .

Yes, Shoney's is big in TN.Sadly we don't have one here or maybe it is fortunate, otherwise I would be in there asking for bread pudding everyday.

We have one here but the time we went there was not any on the buffet. They use to be everywhere down here but the one here in Charleston is the first one that I have seen in ages.

Ahhh! I love bread pudding too. It’s been too long since I’ve had it. I used to save every bread pudding recipe I ran across. Great image. It made my mouth water.

here too, one of my faves but not the fellas.. also, i shouldn't eat white bread anymore, being diabetic.. but my mouth watered just looking at that.. smile
