Trip To Handmade Matzah Bakery 3

Continuation of matzah bakery tour…

Most of the workers are either from the Chassidishe (religious Jewish) community or Russian Jewish immigrants. This lady enjoyed speaking to me in Russian.

Even though the work is very meticulous and quick, it is carried out with calm and care.

OK – now watch the action….

It takes only 32 seconds for the matzah to bake!

Tasting will be done on Pesach -- next Monday night -- we abstain from eating matzah this month so they will be really special on the first night of the holiday, at the seder celebration, where we retell the story of the exodus from Egypt, pray, sing, eat special foods, drink 4 cups (around 5 oz @) of wine, eat a great meal, and praise the One Above for all the wondrous things He has done for us.

It seems to me that a wooden box with the holes that can be seen, is the best way for them to cool without forming any condensation.
