One more sequence…

I wasn't really able to capture it, but the matzahs bake SO quickly, so in order that they not burn, one is flipped over onto the next, and several are removed from the oven at one time.

And the stick covering man…

In a couple of seconds, each stick is covered with paper.

Yes, the matzah is baked on the floor of the oven (pita - not for Pesach! - is also, BTW) and the heat is from the wood fires on both sides.

Ah, so they bake on the cement/ brick floor and the wood heat is on the sides??
