Soba noodles with wild mushrooms

Soba noodles in hot broth with wild japanese mushrooms, fresh herbs and raw quail egg on the side- to add into the soup…all in all- fantastic dish to eat.

      this is restaurant dish, but it is easy to make tasty soba if you have basic ingredients- first of all good soba noodles and tsuyu mixed with water (hot or cold) in proportion 1part of tsuyu, four parts of water...after that you can add pieces of sea weed, shiitake mushrooms fried or cooked in other way, raw egg, crumbs of fried temputa batter. Simplest way is to cook soba, cool it down, place on plate or tray and serve with bowl of cold tsuyu dip on the side and finly chopped spring onions to mix with tsuyu dip..and when all is ready- eat it! I love soba because it is super tasty, simple, healthy and low calory dish
