Bishop´s bread

I baked bishop´s bread yesterday evening and before I was able to take photos this morning, it was almost gone:)

You will need:
200 g butter
200 g powder sugar
240 g flour
2 teaspoons baking powder
5 eggs
1/2 cup dried fruit ( I used dried cherries and strawberries)
nuts and almonds - optional

Make sure all the ingredients are at room temperature

You start with beating the butter with the powder sugar until fluffy, add egg yolks one at a time beating well again after each addition.
In a separate bowl beat the egg whites until firm .
Now start adding the flour (mixed with baking powder) and the egg whites snow into to butter mixture carefuly (using a wooden spoon not to overmix). In the end you add the dried fruit and nuts. You may mix the the dried fruit with a spoon of flour before adding to the dough, so the fruit does not stick together .
Bake at 170 degrees Celsius about 45 minutes

Let it cool and cover with melted chocolate..

      Oh this looks perfeect for my weekend baking - just have to get through the snow to get the fruit - all mine has gone in the Christmas cake. Thanks for note that nuts are optional...very helpful for me. The photographs make this look absolutely delicious - very tempting
