Marinated beef knuckle

Beef knuckle is a cheaper beef meat cut, but if you have time you can transform it to a delicious dish.And as a bonus: this part of beef is rich in collagen, which is great for your joints.
Cut the knuckle into cubes, salt and pepper it and prepare the marinade:
about 2 cups of red wine, 2 tablespoons olive oil,200 g tomatoe paste, 1 onion cut into vedges, 3 garlics cut into slices, oregano . Let the meat marinate over night.
In the morning drain the meat, patt the meat dry with a paper towel and brown it , add 2 tablespoons of flour, stir, add the marinade, dried tomatoes and a cup of beeff stock and bake covered at 160 Celsius very slowly for about 90 minutes. In the end add olives and bake for another half an hour. Enjoy with pasta or rice.
