Catered Chalet Dishes

Whilst working away, we've made many dishes for guests that we would've never cooked at home. The reason being, we're pescatarian. That being said, it's important to taste the food we cook to ensure it's up to a high standard. My partner Haig has cooked up some delicious dishes for guests and adjusted them accordingly to their needs. We have had many different dietary requirements this season; guests with coeliac disease, vegetarians, vegans and dairy intolerant guests which means we have had to experiment and adapt the food. Whilst Haig is cooking up the savoury stuff, I'm making the sweet things - because I have a real sweet tooth. In relation to guests with various dietary requirements the same goes for me. Many bakers understand it can be difficult to cook without dairy but with a little patience and experimentation it can be lovely. Gluten free cakes are surprisingly easy. With the right flour and combination of ingredients you can hardly tell the difference. Below are a few of the guests favourite dishes and desserts.

Slow cooked beef chilli con carne. Served with creme fraiche, green chilli stuffed with cream cheese with a side of tortilla chips.

Chocolate orange mousse. This really is a beautiful recipe. You don't need to serve much of it as it is very rich.
