326/365 ~ Spanish Onions

"There were ruddy, brown-faced, broad-girthed Spanish Onions, shining in the fatness of their growth like Spanish Friars.” ~ Charles Dickens, 'A Christmas Carol'

It is hard to believe that I am still harvesting onion from my garden. Although we've had several hard frosts in the past month the ground has not yet frozen solid. Therefore these onions have seen better days, but they have survived.

These are sweet Spanish onions, which do not hold well over the winter like yellow and red onions. For this reason I am using them as quickly as I can. What I cannot use I will chop and freeze for the winter. One of the onions I pulled today weighed more than 3 pounds. These are honestly the biggest onions I have ever grown.
