I love lemons. The scent, the color, the taste - I just find them to be bursts of cheer. For the past few summers, I've been saying I'd like to try making limoncello, but it takes a month or so, and in the summer, I don't want to wait for it to be ready. With our recent stretch of unseasonably warm weather, I'm thinking of spring and summer, but realizing that it is still truly 2 months away. It's a perfect time to try a limoncello recipe that was recommended to me.
So now - I just have to wait. About one month. After that, I will toss these lemons out, add some simple syrup (just a touch, I don't want it to be too sweet), and the fresh zest of two new lemons.
My limoncello will be ready before spring...that will be a very nice treat!
