I finally have time to cook again. Grilled portobello mushrooms (or is it portobella, are these female mushrooms?) with a zucchini, red pepper and Italian seasoned stuffing topped with feta and mozzarella all over wild rice. Mmmm with a healthy side or Pino Noir.
