7.18.09 -Eggplant Parmesian

Baked up a satisfying dish of eggplant parmesian, or eggplant saltimbocca (don't really know the difference?) to get me through the next week while I'm moving and hence don't have the resources nor time to cook.

SOOOOO SOOOOO SOOOO GOOD.

Breaded and lightly fried eggplant, layered with garlic and spinach, marinara with textured vegetable protein, and a little cheese mixed in on top.

SOOOOO SOOOOO SOOOOO GOOD.
