9.14.09 -Spinach Noodle Kugel

So I have a bit of a knack for taking unflattering pictures of food sometimes. Deal.

Here is a shot of the spinach noodle kugel I made from Veganomicon (in cold, leftover state). Kugel is a traditional Jewish casserole made with egg or some other thickening agent (info ala wikipedia, not memory). This, obvi, no eggs or cheese. Its broken up cooked lasagna noodles, steamed spinach, and a bit of tofu, vegetable broth and oil ground up together in the food processor to make the creamy-ish casserole filling. The tofu spread is almost just like riccotta… and is super super good. Mix this all together with some fresh dill and simple salt and pepper, bake for 30, and voila you have vegan kugel.

This is so far my favorite dish from Veganomicon. Filling, comforting, seriously almost like a lasagna with dill and no sauce. Keep them coming.
