06.27.10 -Stuffed Tomatoes

From this month's Vegetarian Times magazine (good stuff!), Stuffed Tomatoes. Hollowed out tomatoes stuffed with riccota, an egg or two, basil, salt and pepper, diced red onion and zucchini, parmesan, corn, and some of the tomato guts baked for 45 at 350. As per usual, I made too much stuffing. So I hollowed out a zucchini and stuffed that too. Look out!

A super duper summer vegetarian dish, woot!

Bailey thinks so too…
