12.06.10 -Caribbean Stew

Caribbean stew from the Moosewood cookbook. Onion and cabbage sauteed lightly, then cooked in vegetable broth mixed with ginger, cayenne, cilantro, a sweet potato or two, okra, and tomatoes, topped with peanuts (not pictured, because I forgot them.)

This was surprisingly SUPER. A different taste but yet satisfying. Served with a salad with tempeh and other fresh veggies and some grapes for dessert and YOU my friend have your very own lunch fit for a vegan detox!
